The Ultimate Udder Delights Mac and Double Cheese

Who doesn't love a good mac’n’cheese, right? It's the ultimate comfort food for young and old. The kids will adore it as a standalone dinner, and fight for the leftovers to take to school in thermos' the next day. The blue cheese version is our favourite - perfect with a grilled steak, some steamed broccolini and a glass of red. Using two cheeses adds a new dimension to a family favourite and turns ordinary into an everyday indulgence.

Serves  4 as a meal, 6 as a side dish

  • 200 grams streaky bacon diced
  • 1 brown onion diced
  • 2 garlic cloves crushed
  • 50 grams butter
  • 1/3 cup plain flour
  • 500 mls full cream milk
  • 250 mls chicken stock
  • 1/2 teaspoon ground nutmeg
  • 180 grams Udder Delights Cheddar, grated
  • 200 grams Udder Delights Double Brie or
  • 160 grams Udder Delights Heysen Blue
  • 300 grams macaroni pasta shapes
  • Freshly cracked pepper
  • 30cm oval ceramic baking dish/20 cm square ceramic baking dish


Step 1
Preheat grill to 220 degrees celsius
Step 2
Bring a large pot of salted water up to the boil, when it is bubbling add pasta and cook until al dente.
Step 3
Heat milk and stock together in the microwave.
Step 4
In a large saucepan sauté bacon in olive oil for one minute, add onion and sauté until soft and translucent. Add garlic for a further minute then transfer to the dish you will bake the mac’n’cheese in.
Step 5
In the same saucepan melt butter and whisk in flour. Continue to whisk on a medium heat for 2 minutes or until the ‘roux’ which you are making is starting to dry out and become paler. Whisk in warmed milk and stock until fully combined and smooth.
Step 6
Whisk in grated nutmeg, reduce heat and add grated cheddar followed by 1/2 of the brie (diced) or 1/2 of the blue (crumbled), set the remaining cheese aside and remove sauce from heat.
Step 7
Drain pasta, shaking out excess water, put back into pasta pot, add cheese sauce and onion bacon mix, stir well. Pour into baking dish.
Step 8
Dot the top of the mac’n’cheese with the rest of the brie or blue cheese and place under grill for 10 minutes or until bubbling and golden brown.
