Cow Milk Cheeses

At our Adelaide Hills cheesemaking factory, cow milk cheeses account for the majority of our production. We use quality milk from cows which are fed on lush green pastures and this is reflected in the yellow straw hues of our cheese. Customers Australia-wide enjoy our cow milk cheeses and we are proud to offer seven delicious products.


Goat Curd

Adelaide Hills Camembert

Using Adelaide Hills milk, this is a rich surface ripened Camembert. When ripe, the cheese has a soft and creamy texture, a velvety mouth-feel and develops cheesy cauliflower flavours. Camembert pairs beautifully with generous white wines such as Chardonnay or Arneis, or aromatic styles like Gruner Veltliner and Gewurtztraminer. This cheese is delightful when served at room temperature with crusty bread, plain crackers, roasted almonds or muscatels.

Adelaide Hills Brie

This surface-ripened Brie is made using Adelaide Hills-sourced milk. Once the cheese is ripe, you will enjoy the soft and creamy texture, lovely mouth-feel and earthy mushroom flavours. Brie is a versatile cheese that is a great addition to a platter and also lends itself well to other recipes. A baked Brie is a popular dish for parties, while chicken breast stuffed with this creamy cheese is a crowd pleaser.

Adelaide Hills Double Cream Brie

The name provides a hint about this Brie — we add cream to the milk to boost the amount of butterfat before continuing to form the curds into a luscious Brie-style cheese. With this amount of cream, there is a balance of acidity to offset the decadent buttery texture. This Brie is perfect as an appetiser or as an hors d’oeuvre at cocktail parties. Enjoy it with a softer red like Merlot or Pinot Noir, or a beer like a Pilsner or Pale Ale.

Adelaide Hills Triple Cream Brie

Similar to the Double Cream Brie, but creamier, this is a super indulgent cheese with a wonderfully buttery taste. This has a melt-in-your-mouth texture and will take pride of place on a cheese board.

Goat Curd

Adelaide Hills Ash Brie

This Udder Delights Ash Brie is delicious – exhibiting the rich creamy traits of our traditional Brie, but with an additional layer of textual mouth feel and refined earthy tones.

Ash is used in cheesemaking for both aesthetic and practical reasons – it is as much about tradition as it is the science of cheesemaking. The use of activated charcoal helps to neutralise the surface pH of the cheese and aids in the ripening process. It also creates a visually striking rind that mottles together a patchwork of black and white. This finely powdered, food-grade activated charcoal is the same that is used by the medical world for its ability to control and absorb toxins, in this case purifying the rind for a clean pallet finish.

Udder Delights Heysen Blue

A delicious cheese with a historical name, our Heysen Blue is named after Hans Heysen (Hi-Sen), an acclaimed landscape artist of the region. When young, this cheese is quite firm and moist, offering a cheddar-like flavour. As it matures, this flavour deepens and becomes fruitier in its complexity. There is also a slight salty taste and delightful creaminess.

Udder Delights Mawson Blue

Shropshire is a county in the West Midlands of England and this cheese is named in honour of Sir Douglas Mawson — an Australian geologist, academic and renowned Antarctic explorer. Our Mawson Blue product is unique; a blue vein cheese crafted to showcase influences similar to that of a Shropshire blue cheese. With a vibrant orange hue and added cream, this is a rich, luscious and visually striking artisan blue.
